Free book Friday!

Gardeners never have enough space, right? So climb the walls with Chris McLaughlin in Vertical Vegetable Gardening. This book has a breezy way about it and gives you confidence. A great starter book for the novice edible gardener, with how-tos on soil and planting—but us lifers will also revel in espalier instructions and clever container ideas like this one. You’ll enjoy McLaughlin’s verve, and appreciate her sound advice.

By the time I get the plants in tubs and then covered with roofed hardware cloth cages to keep out the rats, squirrels, deer, possums, and raccoons, there’s not much room left for the veggies!

I can’t get enough of arugula with roasted yellow or red beets, toasted nuts, and herbed goat cheese. It hardly needs a dressing, but I occasionally dress it lightly with olive oil, citrus, and cracked black pepper.

Chopped romaine, diced gala apples, thInly sliced purple onion tossed with a viniagrette(honey/Dijon) and topped with salted cashews…yum.

I probably make a Caesar more often than anything else.  I especially like to make extra large croutons from Boudin Sourdough, sauteed in garlic oil/butter until the outsides are crispy, but the insides remain soft.  Yum!

Spinach base to almost every meal, eat gluten free, and roll up a protein of sorts (clean deli meat) set it up like a pinwheel, over the spinach. use baby carrots as spokes too, and add in some purple cabbage, with cherry tomatoes, and a few sprigs of any purpley colored “green”.  Make cheese cubes from your fav flavor, or crumble some blue on the top!  Sprinkle almond slices around the outside edge.  East dry or mix up some yogurt and honey with some mandarin orange.  put a few dolops here and there pretty soon you have a “mountain -o-salad, and you weren’t even trying to!

I like to pick fresh baby greens from the garden and add colorful edible flowers such as broccoli (yellow), johnny jump-ups (violet), rosemary (blue), calendula (orange - break apart blossoms) and pineapple sage (red).  Tastes like Spring!

My favorite salad includes any variety of baby greens, including spinach, read leaf, romaine, radicchio, etc. with grilled chicken slices, cashews, and a sweet/sour poppy seed dressing…YUM!

I love salad!  I love Chinese Chicken salad.  Shredded cabbage, green onions, shredded chicken with Ramen noodle mix dressing then toss in the crunchy broken bits of the noodles.  I’m just getting a few tomatoes and some lettuce from my garden so we’ve been eating the luscious lettuce with tomatoes-that’s it-just delish!!!

I eat a LOT of salads, virtually anything goes, but my go-to salad is spring greens, pears, gorgonzola, pecans, and a blood orange vinaigrette.

Just discovered a chopped kale and shaved Brussels sprouts salad tossed with Parmesan a lemon mustard vinegarette and topped with toasted almonds. I will be making this salad often

Your comment:  Because I don’t have ‘room’ for a ‘traditional garden’ I rely on my local stands, or grocery store:  but my fave is a Spring Mix,  with Sliced Red Onions, jumbo croutons, (altho not very healthy) I cut up Genoa Salami, Cube Muenster Cheese, Shredded Cheddar, A bit of Hidden Valley Ranch and A bit of Good Seasons Italian made with Red Wine Vinegar, And then a couple of splashes of Red Wine Vinegar directly.  Then I make the hubby, his salad with the same Spring Mix, He likes his Chicken pieces with Honey Mustard drowning what he calls our Grass clippings salad.  smile

Honestly, I am a whatever-is-in-the-refridgerator kinda gal these days. I think my all time fave would have to be baby spinach, candied walnuts and strawberries w/ a little goat cheese and strawberry (or blueberry) vinegarette.

My almost everyday, homemade salad consists of a bed of spinach, drizzled with catalina dressing. I pre-mix cooked/chopped chicken, mixed with dried cranberries, celery, chopped apples.  I slice a half of avocado on top of the spinach with a 1/2 cup of cottage cheese on the side of the plate. Delicious!

I can make a salad out of just about anything I have in my refrigerator or cupboards or garden.  I am especially interested in herbs in salad.  I also make my own wine vinegar with all sorts of herbs.  Since I like main course salads I add meat or cheese or nuts.  Fruit also is a nice addition.  I love eating what I have grown or made.
